Description: Disaccharide of glucose with multiple functions in the food industry. It is naturally occurring in many foods such as mushroom, baker's yeast etc. Its functions include preserving freshness by retaining color, managing moisture , enhancing texture, extending shelf life as well as masking undesired flavors or enhancing flavor intensity. It has a high heat and acid stability.
